Lemon Curd


4 eggs
2 c. sugar
1 c. butter (no substitutes), melted
2/3 c. lemon juice
3 Tbs. grated lemon peel
1/8 tsp. salt


In the top of a double boiler, beat eggs and sugar. Stir in butter, lemon juice, peel and salt. Cook over simmering water for 15 minutes or until mixture is thickened and reaches 160 degrees. Cover and store in refrigerator for up to 1 week. Serve chilled. Makes 3 1/2 cups.
