Grilled Bruschetta Toasts
Ingredients:
1 loaf Italian bread, 1 inch slices
1/2 pint grape or cherry tomatoes, quartered
1 small yellow pepper, chopped
3 Tbs. olive oil
1 garlic clove, minced
2 Tbs. fresh basil, chopped
3 Tbs. Parmesan cheese, grated

Directions:
Preheat grill. Lightly toast both sides of bread slices for 2 minutes per side.
Combine tomatoes, pepper, 1 Tbs. oil, garlic and basil.
Spoon tomato mixture onto toast and sprinkle with cheese.
