Glazed No-Bake Peach Pie


7-9 large peaches
1 Tbs. lemon juice
1 Tbs. cornstarch
1/2 c. sugar
1 9" baked pastry shell


Peel and slice enough peaches to fill a 1 cup measure. Whirl peach slices with lemon juice in container of electric blender until smooth. Pour puree into a 2 cup measure, add water to make 1 cup. Combine cornstarch and sugar in a small saucepan. Stir in peach puree. Cook over medium heat, stirring constantly, until thick and clear. Cool slightly. Peel and slice remaining peaches and arrange, overlapping, in baked pastry shell. Pour glaze over slices, covering peaches completely. Chill at least 2 hours. Best when served the same day.
