Eggplant Casserole


1 eggplant
1 egg, well beaten
1/2 c. flour
1 onion, diced
1 can pizza sauce
Salt and pepper
1/4 c. Parmesan cheese, grated


Slice eggplant thin. If desired soak eggplant in salt water for 30 minutes. Drain and dip slices in egg, then in flour. Fry until slightly brown. Saute onion until golden brown; add pizza sauce. Season to taste. Heat until simmering. Put eggplant slices in casserole; sprinkle with cheese. Add onion sauce mix. Bake at 325 for 45 minutes to 1 hour.
