Crunchy Fried Fillets


1 lb. frozen perch or other fillets, thawed
1/4 tsp. salt
3/4 c. flour
1 egg, beaten
3 Tbs. water
25 to 30 saltine crackers, crushed
Vegetable oil


Sprinkle fillets with salt and dredge in flour. Combine egg and water, mixing well. Dip floured fish in egg mixture, and coat with cracker crumbs.Fry in hot oil (360 degrees) over medium heat until browned. Drain.
