Corn Pie


Pie crust:
3 c. flour
1 1/2 tsp. salt
1 c. plus 2 Tbs. shortening
6 Tbs. cold water

1 can whole corn or fresh corn
1 can creamstyle corn
4 chopped hard cooked eggs
1 c. cooked diced potatoes
1/2 c. sugar
Salt and pepper


Mix and pour into an unbaked pie shell. Dot with butter. Cover with top crust, prick and bake at 400 for 45 to 55 minutes.
