Classic Dutch Macaroni Salad


3 c. uncooked macaroni
2 med. onions, chopped
2 Tbs. parsley flakes
1 med. carrot, grated
1 stalk celery, grated
9 hard-boiled eggs, chopped
2 Tbs. white vinegar
2 c. mayonnaise
2 Tbs. mustard
1 c. sugar
1 Tbs. celery seed
Salt & pepper to taste
3 hard-boiled eggs, sliced


Cook macaroni in boiling salted water in saucepan for 10 to 13 minutes or until al dente. Drain in colander; cool. Combine with onions, parsley flakes, carrot, celery, chopped eggs vinegar, mayonnaise, mustard, sugar, celery seed, salt and pepper in bowl; mix well. Mixture will be soupy. Chill until serving time. Top with sliced eggs.
