Chicken Salad


Cooked chicken
Onion, finely chopped
Celery, finely chopped
Salt to taste


This is an old family recipe and there are no exact measurements. To get the most flavor, bake the chicken breasts, skin on, for 1 hour. Cool. Remove skin and bones. Finely chop the breasts. Add finely chopped onion and celery. If I have 3 c. chicken, I use about 1 c. onion and 1 c. celery. Mix together. Add just enough mayonnaise to moisten. Add salt to taste.

This salad is requested when I have a picnic or party.
