Chicken Meatballs
Ingredients:
2 1/2 c. minced cooked chicken breasts
3 Tbs. finely chopped onion
3 Tbs. finely chopped celery
2 Tbs. finely chopped carrot
2 tbs. dry bread crumbs
1 egg white
1/2 tsp. poultry seasoning
Pinch pepper

Directions:
In a bowl, combine all ingredients; mix well. Shape into 3/4" balls; place on a baking sheet that has been coated with nonstick cooking spray. Bake at 400 for 8-10 minutes or until lightly browned. Makes about 2 1/2 dozen.
