2 c. shredded beets
1 c. chopped carrots
1 c. chopped onion
1 Tbs. butter
2 c. beef stock
1 Tbs. lemon juice
1/2 c. thick sour cream
1 c. shredded cabbage


Cook beets, carrots, and onion in boiling ,salted water to cover for 20 minutes. Add butter, stock and cabbage; cook 15 minutes. Add lemon juice; pour into bowls. Top with spoonful sour cream.
